Kauffman Amish Bakery Fruit Cake

from A Plain & Simple Christmas

1 ½ cups sugar
2 eggs
2 cups applesauce or 2 cups fruit (any kind)
½ cup oil
2 cups flour
1/4 tsp salt
2 tsp baking soda

Mix together all ingredients and pour into a greased 9x13 pan. Bake at 350 degrees for 45 minutes Icing

1 stick butter
½ cup evaporated milk
¾ cup brown sugar
1 tsp vanilla

Stir together in saucepan. Boil 5 minutes. Cool cake and cover with icing.
